Running with a sub-panel is cheaper than using two separate disconnects. The 320 amps is a service ideal for residential 400 amp meter sockets. The meter main has provision for two 200 amp main breakers. Those are your outside disconnects as required by code. From one main breaker feed your mechanical room in the house. The other 200 amp breaker feeds the shop. In both cases you will need to use 4 wire feeders, since once past the meter main your panels become sub-panels.
