Gaited horses are built as differently as non gaited horses. I have a wide mutton withered MFT mare and a RMH that is much more narrow.....they are both gaited, but require very different saddles. A common misconception is that you can't equip stirrups with trapper saddles but you actually can. If you equip a non-trapper saddle with stirrups, and then equip your panther saddle, the game let's you keep your stirrup bonuses. So with the +2 to speed and acceleration the trapper saddles all give you the stats from the best stirrups.
